Crack the eggs and whisk them in a bowl. Slice the banana. Heat a pan over medium-high heat and spread coconut oil in it.
2
|
Place the eggs in the pan and spread the banana on one half of the omelet, sprinkle with plenty of cinnamon.
3
|
As soon as the surface begins to set slightly, carefully fold the side without the banana pieces over to the other side. Reduce the heat slightly.
4
|
After one to two minutes, carefully turn the omelet over and fry it again for one to two minutes on the other side until, when pressure is applied to the surface, no more liquid egg flows out of the omelet.

|
Spread peanut butter on the top of the omelet and slide it onto a plate. Serve with fresh fruit of your choice and toast.

Tips & Tricks (5)
- Banana Ripeness Matters 🍌Use overripe bananas with brown spots for maximum sweetness and easier mashing, which creates a smoother, more caramelized omelette texture.
- Perfect Pan Technique 🍳Use a non-stick pan and coconut oil with medium-low heat to prevent sticking and achieve a golden caramelization without burning the delicate eggs and bananas.
- Egg Whisking Secret 🥚Whisk eggs thoroughly with mashed banana and a pinch of cinnamon until completely smooth to ensure even distribution of flavors and a consistent texture.
- Folding Finesse 🧈When folding the omelette, use a silicone spatula and fold gently in thirds, allowing the peanut butter to create a luxurious inner layer without tearing the eggs.
- Garnish Like a Pro 🍃Finish with a light dusting of additional cinnamon and strategically placed fresh fruit to enhance both the visual appeal and flavor complexity of the dish.
