Preheat the oven to 250°C (480°F) using conventional oven settings (top and bottom heat). Wash the apple, remove the core, and cut into thin rings or wedges. Mix in a bowl with cinnamon and sugar.

Roll out the tarte flambée dough thinly if necessary and place it on a baking sheet lined with parchment paper. Spread the ricotta evenly over the dough, then top with apple rings and nuts. Drizzle honey evenly over the tarte flambée using a sweeping motion and bake for 10 minutes.

Serve the tarte flambée immediately and top with ice cream, whipped cream or Greek yogurt as desired.
