Ingredients
- 4 slices - bacon
- 4 tablespoons - olive oil
- 2 - sweet potatoes
- Salt & pepper
- 2 - avocados
- 2 tablespoons - lime juice
- ½ tsp - smoked paprika
- 1 tbsp - dried cilantro
Instructions
- Preheat oven to 425 and line a baking sheet with foil.
- Slice the potatoes.
- Brush foiled baking sheet with olive oil.
- Lay on a single layer of sweet potato rounds.
- Sprinkle with salt & pepper.
- Bake 20 minutes then flip and bake an additional 10 minutes.
- In a small bowl mash the avocado then stir in lime juice and paprika.
- Place a dollop of avocado mix on each sweet potato round.
- Sprinkle on bacon and cilantro.
- Serve and enjoy!
