Ingredients

  • 1 tbsp - avocado oil
  • 1 - onion
  • 2 - sweet potatoes
  • 1 tbsp - chili powder
  • ½ tbsp - cumin
  • ½ tbsp - paprika
  • ½ tbsp - garlic powder
  • 2 cans - diced & crushed tomatoes
  • 1 can - chili beans
  • 1 can - black beans
  • 1 ½ cups - water
  • Salt and pepper

Instructions

  1. Warm avocado oil in a large pot over medium heat and sauté the onion for 5 minutes, until translucent.
  2. Season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Stir in remaining ingredients then bring to a simmer.
  3. Let cook, uncovered, for about 25 minutes, stirring occasionally.
  4. Once thickened to desired consistency, taste and adjust seasonings, if needed. Serve warm!
