Sweet Potato Fiesta Meal Prep
Instructions

Preheat the oven to 425°F (220°C).

Cube the sweet potatoes and spread them evenly on a baking sheet. Bake for 25–30 minutes until tender and slightly browned.

While sweet potatoes bake, chop the bell peppers and onion.

In a large skillet, sauté the chopped vegetables until tender.

Add the ground beef and cook until browned and fully cooked.

Season with salt, pepper, garlic salt, paprika, and cumin. Mix well.

Add roasted sweet potatoes to the skillet and stir everything together.

Divide the mixture evenly into 4 meal prep containers.

Let cool and refrigerate until ready to eat.
