Not sure how to use the last few tablespoons of pumpkin puree in your can? Make this Sweet Pumpkin Quesadilla for a simple tasty treat! This is probably the easiest recipe you’ll ever make. I almost feel silly for posting it, but here goes nothing! Spread a creamy layer of pumpkin purée onto one tortilla, drizzled on some honey and let the kids sprinkle both sides with cinnamon or pumpkin pie spice before sandwiching them together and cooking to toasty perfection. I’ll usually melt a couple teaspoons of butter in the pan to cook the quesadilla in and it turns out to be so sweet and crunchy it almost tastes like dessert.

Tips & Tricks (5)
- Toast Your Tortillas First 🔥Lightly toast the tortillas in a dry pan for 30 seconds before assembling to remove excess moisture, which prevents sogginess and helps them crisp up better when cooking the quesadilla.
- Warm Your Pumpkin Puree 🎃Gently warm the pumpkin puree with the maple syrup and cinnamon before spreading to create a smoother, more cohesive filling that distributes evenly and integrates better with the cheese.
- Layer Strategically for Even Melting 🧀Spread cream cheese first as a barrier, then pumpkin puree, then mozzarella on top—this prevents the pumpkin from soaking into the tortilla and ensures the cheese melts into creamy pockets throughout.
- Brown Butter for Nutty Richness 🧈Use brown butter instead of regular butter to cook the quesadilla, which adds a sophisticated, nutty depth that elevates the dessert-like quality and creates superior golden-brown crust.
- Add Chocolate Strategically ⏱️Place chocolate chips in the center only, and cook until the tortilla is nearly done before flipping—this prevents the chocolate from burning while ensuring it melts just enough to create pockets of sweetness.
