To make the thyme simple syrup, combine the sugar, water, and thyme in a small saucepan. Bring to a boil over medium-high heat, stirring until the sugar dissolves. Remove from heat, and let the thyme simple syrup infuse until it’s completely cool. Remove and discard the thyme sprigs. Store in a jar in the fridge.

In a cocktail shaker, combine the gin, simple syrup, and lemon juice. Add ice, and shake for about 30 seconds, or until the outside of the cocktail shaker is frosty. Strain into a champagne glass. Top with champagne, tonic, or soda water. Slap a sprig of thyme against the palm of your hand to release the oils. Garnish the cocktails with thyme and lemon wedges.

Tips & Tricks (5)
- Infuse Thyme Syrup Overnight 🌿Prepare your thyme simple syrup the day before and let it steep overnight in the refrigerator to maximize the herb's delicate floral flavors and ensure they fully integrate into the syrup.
- Chill All Components Beforehand ❄️Pre-chill your gin, champagne, and coupe glasses for at least 2 hours before mixing to maintain the cocktail's crisp temperature and prevent dilution from excessive ice melt.
- Fresh Lemon Juice Only 🍋Always use freshly squeezed lemon juice rather than bottled—the bright acidity and oils in fresh juice are essential to balance the sweetness of the thyme syrup and complement the champagne's complexity.
- Add Champagne Last for Optimal Fizz ✨Pour the champagne as the final step just before serving to preserve its carbonation and ensure each sip delivers those elegant bubbles that define a proper French 75.
- Garnish with Fresh Thyme Sprig 🍃Top each drink with a fresh thyme sprig as both a visual indicator of flavor and an aromatic element—gently slap the sprig between your palms before placing it to release essential oils that enhance the drinking experience.
