Instructions
1
Preheat oven to 175°C (top & bottom heat). Grease or line a loaf pan with parchment paper.
2
In a large bowl, mash the bananas until smooth.
3
Add eggs, white sugar, and brown sugar. Mix until combined. Stir in oil, milk, and vanilla extract until smooth.
4
In a separate bowl, mix flour, baking soda, baking powder, and salt. Gently fold the dry mixture into the wet mixture until just combined. The batter should be soft but not runny. Do not overmix.
5
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes. If the top browns too quickly, loosely cover with foil after about 40 minutes. Let the loaf cool completely before adding frosting, this is very important.
6
Mix everything together until smooth and creamy. Do not overwhip, the frosting should stay thick and silky. Spread evenly over the completely cooled banana bread.
7
Dust 1 tablespoon cocoa powder over the frosting for the classic tiramisu look.

Tips & Tricks (5)
- Use Overripe Bananas for Maximum Moisture 🍌Choose bananas with brown spots or even mostly brown skin—they contain more natural sugars and moisture, resulting in a denser, more flavorful bread that stays moist longer.
- Bloom Instant Coffee in Warm Milk ☕Dissolve instant coffee powder in warm milk before adding to the batter to ensure even distribution and deeper tiramisu flavor throughout the bread without grittiness.
- Room Temperature Cream Cheese & Mascarpone 🧈Allow both cheeses to sit at room temperature for 30 minutes before mixing the frosting—this ensures a smooth, lump-free texture that spreads evenly and blends seamlessly.
- Don't Overmix the Batter 🥄Fold in flour gently until just combined to prevent gluten development, which would make the bread tough; a few lumps are better than overdeveloped gluten.
- Dust Cocoa Powder Just Before Serving 🎨Apply the final cocoa powder dusting within an hour of serving to keep it vibrant and prevent it from absorbing moisture and becoming muddy in appearance.
