Instructions
1
|
Preheat oven to 175°C (top & bottom heat). Grease or line a loaf pan with parchment paper.
2
|
In a large bowl, mash the bananas until smooth.
3
|
Add eggs, white sugar, and brown sugar. Mix until combined. Stir in oil, milk, and vanilla extract until smooth.
4
|
In a separate bowl, mix flour, baking soda, baking powder, and salt. Gently fold the dry mixture into the wet mixture until just combined. The batter should be soft but not runny. Do not overmix.
5
|
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes. If the top browns too quickly, loosely cover with foil after about 40 minutes. Let the loaf cool completely before adding frosting, this is very important.
6
|
Mix everything together until smooth and creamy. Do not overwhip, the frosting should stay thick and silky. Spread evenly over the completely cooled banana bread.
7
|
Dust 1 tablespoon cocoa powder over the frosting for the classic tiramisu look.

Tips & Tricks (5)
- Use Overripe Bananas for Maximum Moisture 🍌Choose bananas with brown spots or nearly black skin, as their higher sugar content and moisture create a tender crumb and eliminate the need for excess oil, preventing a dense loaf.
- Bloom the Coffee Powder for Deeper Flavor ☕Dissolve instant coffee powder in a tablespoon of warm water before adding to the frosting to intensify the tiramisu essence without adding grittiness or bitterness to the cream cheese mixture.
- Chill the Mascarpone Frosting Before Spreading 🧊Refrigerate the frosting for 30 minutes after mixing to achieve the perfect spreadable consistency that won't sink into the warm banana bread or tear the crumb.
- Don't Overmix the Batter for Tender Crumb 🥄Fold wet ingredients into dry ingredients until just combined—overworking develops gluten, resulting in a tough, dense loaf instead of the soft, moist texture this recipe requires.
- Dust Cocoa Powder Right Before Serving ✨Apply the final cocoa powder dusting immediately before serving rather than in advance, as moisture will cause it to clump and darken, compromising the elegant presentation and flavor clarity.
