Ingredients
- 2 - very ripe bananas
- 2 - eggs
- 100 grams - neutral oil
- 80 milliliters - milk
- 100 grams - white sugar
- 60 grams - brown sugar
- 250 grams - all-purpose flour
- 1 tsp - baking soda
- 1 tsp - baking powder
- 1 pinch - salt
- 1 tsp - vanilla extract
- ½–1 tsp - instant coffee powder
- 200 grams - mascarpone
- 50 grams - cream cheese
- 40 grams - powdered sugar
- 1 tsp - vanilla extract
- 1 tbsp - cocoa powder
Instructions
- Preheat oven to 175°C (top & bottom heat). Grease or line a loaf pan with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add eggs, white sugar, and brown sugar. Mix until combined. Stir in oil, milk, and vanilla extract until smooth.
- In a separate bowl, mix flour, baking soda, baking powder, and salt. Gently fold the dry mixture into the wet mixture until just combined. The batter should be soft but not runny. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes. If the top browns too quickly, loosely cover with foil after about 40 minutes. Let the loaf cool completely before adding frosting, this is very important.
- Mix everything together until smooth and creamy. Do not overwhip, the frosting should stay thick and silky. Spread evenly over the completely cooled banana bread.
- Dust 1 tablespoon cocoa powder over the frosting for the classic tiramisu look.
