Instructions

1
|
Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.
2
|
Using the large side of a box grater, shred the block of tofu. Some large chunks will fall off so I take those and very gently push them through the grater. Place the tofu on the prepared baking sheet.
3
|
Drizzle the tofu with the oil, salt, and taco seasoning and toss to combine so it is evenly covered. Spread the tofu out into a thin layer. Bake for 30-35 minutes or until the tofu is crispy around the edges. Check around 25 minutes to make sure it isn't burning. Remove from the oven and let cool slightly. Once cooled a bit, dice the tofu so it’s in shreds.
4
|
Meanwhile, toss the sweet potato with the olive oil, salt + pepper, and taco seasoning. Spread in an even layer on a baking sheet and roast for 25 minutes, tossing halfway, until fork tender.
5
|
Assemble the bowls by dividing the tofu "beef", sweet potato, cottage cheese, avocado, and honey evenly among 2 bowls. Garnish with cilantro and ENJOY!

If using super firm tofu, there’s no need to press it first.

Tips & Tricks (5)

  • Press Your Tofu Thoroughly 🫧
Use a tofu press or wrap it in cheesecloth and weight it down for at least 30 minutes to remove excess moisture, allowing the tofu to absorb seasoning better and achieve a crumbled, ground beef-like texture.
  • Toast the Taco Seasoning 🌶️
Bloom your taco seasoning in olive oil for 30-45 seconds before adding the crumbled tofu to unlock deeper, more complex spice flavors and prevent a raw, powdery taste.
  • Crisp Your Sweet Potatoes Separately 🍠
Roast sweet potatoes in a separate pan until edges are caramelized, then add to bowls last to maintain their crispy texture and prevent them from absorbing excess moisture from other components.
  • Infuse Hot Honey with Flavor 🍯
Warm your hot honey with a pinch of red pepper flakes, garlic, or cumin for 2-3 minutes before drizzling to create a custom-flavored finishing sauce that elevates the entire bowl.
  • Use Cottage Cheese as a Protein Boost 🥄
Dollop creamy cottage cheese just before serving and gently fold it into warm components to add richness and additional protein without overmixing, which preserves its texture and prevents curdling.
