Slice the tofu and place it on a layer of kitchen paper. Gently press down on the tofu slices with a second kitchen paper to remove as much liquid as possible.

Spread oil in a pan, place the tofu slices side by side in the pan, and fry over medium-high heat for four to five minutes until the undersides are golden brown. Lightly salt the tofu, then turn it over and fry the other side for two to three minutes until it is also golden brown.

Meanwhile, slice the tomato and mozzarella into thin strips, wash the arugula, and spin it dry.

Spread a thin layer of pesto on one slice of bread. Top with arugula, tomato, cooked tofu, and mozzarella. Place a second slice of bread on top of the sandwich.

Place the sandwich in the same pan and fry on both sides for about three to five minutes over medium heat until lightly crispy. Press down on the sandwich from above with a spatula every now and then so that it flattens slightly and the cheese melts well.
