Tips & Tricks (5)
- Caramelize Your Tomato Paste 🍅Cook the tomato paste in butter for 2-3 minutes until it deepens in color and loses its raw taste, creating a rich foundation that transforms the entire sauce's depth and complexity.
- Use Pasta Water as Liquid Gold 💧Reserve starchy pasta water and add it gradually to adjust sauce consistency—it emulsifies beautifully with cream and helps the sauce cling to tortellini while thickening naturally.
- Add Cream at the Right Temperature 🔥Reduce heat to low before pouring in heavy cream to prevent curdling; slowly incorporate it while stirring to create a silky, unified pink sauce rather than separated streaks.
- Layer Your Cheeses Strategically 🧀Stir in grated Parmesan off-heat after cream is added, then finish with mozzarella just before serving to prevent stringiness and maintain distinct, vibrant cheese flavors.
- Finish with Fresh Basil Last 🌿Tear fresh basil by hand (never cut with a knife) and fold it in during the final 30 seconds off-heat to preserve its delicate flavor and beautiful color.
