Ingredients

  • ½ cup - olive oil
  • ¼ cup - red wine vinegar
  • 2 teaspoons - Italian seasoning
  • ½ tsp - granulated sugar
  • 1 clove - garlic
  • ½ tsp - Kosher salt
  • ¼ tsp - black pepper
  • ¼ cup - red onion
  • 8 ounces - dried short pasta
  • 8 ounces - cherry tomatoes
  • 1 - English cucumber
  • 4 ounces - fresh mozzarella
  • fresh parsley leaves

Instructions

  1. Mix together the dressing ingredients first, then add the diced red onions to the dressing.
  2. Cook the pasta for 12 min in boiling heavily salted water. Prepare vegetables.
  3. After draining, dunk the strainer of pasta in an ice bath (equal parts ice and water in a large bowl) and get it cold fast!
  4. Mix all the ingredients together and chill the salad for at least 30 minutes.
