  • 1 box - Banza Cascatelli pasta
  • 4 tablespoon - unsalted butter
  • 2 cloves - garlic
  • 1 ½ cup - heavy cream
  •   - Salt
  •   - Black pepper
  • ½ teaspoon - paprika
  • ½ teaspoon - garlic powder
  • ½ teaspoon - onion powder
  • 1 cup - cheddar cheese
  • 1 cup - mozzarella cheese
  • ½ cup - Parmesan cheese
  • 1 tablespoon - truffle oil
  •   - Fresh truffle shavings
  • ½ cup - reserved pasta water

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of the pasta water and drain.
  2. In a large skillet over medium heat, melt butter. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in heavy cream and bring to a simmer. Season with salt, pepper, paprika, garlic powder, and onion powder.
  4. Add cheddar, mozzarella, and Parmesan cheese. Stir continuously until the cheese melts and the sauce is creamy.
  5. Drizzle in truffle oil and add fresh truffle shavings if using. Mix well.
  6. Add the cooked pasta and a splash of reserved pasta water. Toss to coat thoroughly.
  7. Simmer for a couple more minutes to thicken. Serve hot, topped with more Parmesan and truffle if desired.
