  • ½ pound - pasta
  • 2 tablespoon - olive oil
  • ½  - yellow onion
  • 3 cloves - garlic
  •   - Salt
  •   - Black pepper
  • 1 cup - pepperoni
  • 2 tablespoon - tomato paste
  • 1 jar - black truffle pasta sauce
  • 1 cup - heavy cream
  • ½ teaspoon - garlic powder
  • ½ teaspoon - onion powder
  • ½ teaspoon - paprika
  • ½ teaspoon - dried basil
  • 1 cup - ricotta cheese
  • ½ cup - Parmesan cheese
  • 1 cup - mozzarella cheese
  • ½ cup - reserved pasta water

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
  2. In a skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, then add garlic and sauté until fragrant.
  3. Add chopped pepperoni and cook until crispy.
  4. Stir in tomato paste and cook for 1 minute. Then pour in the truffle pasta sauce and bring to a simmer.
  5. Add heavy cream and season with salt, pepper, garlic powder, onion powder, paprika, and basil.
  6. Stir in ricotta, Parmesan, and mozzarella until melted and well combined.
  7. Add cooked pasta and reserved pasta water. Toss to combine and let simmer for 2–3 minutes.
  8. Top with additional mozzarella, Parmesan, and pepperoni.
  9. Broil for 7–10 minutes or until cheese is melted and golden, and pepperoni is crispy.
  10. Let cool slightly before serving.
