Tips & Tricks (5)
- Brown the Turkey Properly 🔥Break the ground turkey into small, distinct pieces and let them sear undisturbed for 2-3 minutes before stirring to develop deep caramelization and rich, meaty flavor that forms the sauce's foundation.
- Bloom the Tomato Paste 🍅Toast the tomato paste in olive oil for 1-2 minutes before adding liquid to intensify its umami depth and eliminate any metallic taste, creating a more complex sauce.
- Soften Your Soffritto Slowly 🧅Cook the onion, garlic, and carrot on medium-low heat for 8-10 minutes until completely softened and translucent before adding the turkey, allowing their natural sweetness to develop and meld into the sauce.
- Simmer Low and Long ⏱️Maintain a gentle simmer for 20-30 minutes rather than a rapid boil to allow the flavors to meld and the sauce to naturally reduce while the lean turkey stays tender instead of drying out.
- Finish with Parmesan Emulsion 🧀Reserve 1 cup of pasta water and add it gradually to the sauce while whisking in grated Parmesan off the heat to create a silky, luxurious coating that clings beautifully to the fettuccine.
