Ingredients

  • 1 tbsp - olive oil
  • 1 - onion
  • 2 stalks - celery
  • 1 - red bell pepper
  • 1 clove - garlic
  • 1 lb - ground turkey
  • 1 - zucchini
  • 15 ounces - tomato sauce
  • 15 ounces - tomatoes
  • ½ cup - water
  • 30 ounces - white beans
  • 1 ½ teaspoons - kosher salt
  • 1 tbsp - chili powder
  • 2 teaspoons - cumin

Instructions

  1. Heat the oil in a large pot and saute the onion and celery for 2 minutes.
  2. Add the garlic and turkey and sauté for 5-6 minutes or until turkey is cooked through and broken into tiny pieces.
  3. Add the remaining ingredients and bring to a boil.
  4. Cover, reduce to a simmer and cook for 20 minutes.
  5. Serve.
