Tips & Tricks (5)
- Reserve Pasta Water for Silky Sauce 💧Always save 1-2 cups of starchy pasta water before draining; it's the secret to achieving a silky, cohesive sauce that coats every noodle perfectly and prevents the cheese sauce from becoming too thick.
- Bloom Your Garlic in Butter 🧈Mince fresh garlic and cook it gently in melted butter for 30-45 seconds before adding cream to extract its full flavor without burning, creating a more refined garlic base than powder alone.
- Temper Your Cheese Blend Strategically 🧀Mix the Velveeta with harder cheeses (Parmesan, Asiago) for emulsification, while adding softer cheeses (Fontina, Gouda) last off-heat to prevent graininess and ensure a perfectly creamy texture.
- Toast Your Topping for Extra Depth 🍂If adding a breadcrumb topping, toss it with melted butter and a pinch of smoked paprika, then broil it separately for 1-2 minutes before sprinkling on top to create a crispy, golden crust without overbaking the pasta.
- Underbake Slightly Before Final Bake 🕐Combine the pasta with cheese sauce while still slightly warm, then bake at 375°F for just 20-25 minutes until edges bubble but centers remain creamy—carryover heat will continue cooking it perfectly without drying out the dish.
