Instructions
1
Preheat the oven to 225℉. Line a large baking sheet with parchment paper.
2
Using a stand mixer with the whisk attachment or a handheld mixer, whip the egg whites and cream of tartar together at high speed until soft peaks form.
3
While still mixing, very slowly add the sugar. Continue mixing at high speed for 5 minutes or until stiff glossy peaks form.
4
Very gently fold in the peppermint extract, vanilla, and food coloring. Transfer the meringue to a piping bag fitted with a large piping tip. Pipe the meringues onto a baking sheet lined with parchment paper, leaving about 1 inch between each one.
5
Bake in a 225℉ for 45 minutes without opening the oven door. Turn off the oven and let the meringues sit in the oven without opening the door for another 1 hour. Remove from the oven and let cool fully. Enjoy!

Tips & Tricks (5)
- Room Temperature Egg Whites 🥚Bring egg whites to room temperature before whipping—they'll reach stiff peaks faster and create a more stable, voluminous meringue with better texture.
- Cream of Tartar Stabilization ✨Add cream of tartar once egg whites are foamy but before adding sugar; this acid prevents overbeating and ensures your meringues won't weep or collapse during baking.
- Gradual Sugar Incorporation 🍬Add granulated sugar one tablespoon at a time while beating to ensure complete dissolution and achieve glossy, stiff peaks that hold their shape perfectly.
- Extract Balance & Timing 🌿Fold vanilla and peppermint extracts in gently at the very end using a spatula to preserve the meringue's airiness, and use ¼ teaspoon peppermint to avoid overpowering the vanilla.
- Low & Slow Baking Method 🔆Bake at 200-225°F for 60-90 minutes until crispy and dry inside; this gentle heat prevents browning, keeps them white, and ensures the delicate structure sets properly without cracking.
