Tips & Tricks (5)
- Drain and Dry Your Corn 🌽Drain canned corn thoroughly and pat dry with paper towels to remove excess moisture, which prevents soggy fritters and ensures crispy edges.
- Chill the Batter Before Frying 🧊Refrigerate your fritter batter for at least 30 minutes to allow the baking powder to activate properly and create lighter, fluffier fritters with better structure.
- Use a Consistent Oil Temperature 🌡️Maintain oil at 350°F and use a thermometer to monitor—this temperature sweet spot ensures golden, crispy exteriors without burning while cooking through the center.
- Toast Your Cornmeal First 🔆Lightly toast the cornmeal in a dry skillet for 2-3 minutes before mixing to enhance its nutty flavor and prevent a gritty texture in the finished fritters.
- Maple Syrup as a Binding Agent 🍁The maple syrup not only adds subtle sweetness but also acts as a natural binder and moisture regulator, so don't skip it or substitute with other sweeteners.
