
Vegan Crunch Bars
These homemade Vegan Crunch Bars are a delicious copycat version of the classic candy bar — only better! Made with just 5 ingredients and 5 minutes of prep, they’re crispy, crunchy, and perfectly sweet, with a creamy peanut butter twist. Vegan and gluten-free.

Ingredients
- 1 ½ cups - dark chocolate chips
- ½ cup - sweetened condensed coconut milk
- ⅓ cup - creamy peanut butter
- 2 tablespoons - coconut oil
- 2 cups - crispy rice cereal
Instructions
- Line an 8×8" baking pan (or similar sized pan) with parchment paper.
- In a large microwave-safe bowl, combine chocolate chips, sweetened condensed coconut milk, peanut butter, and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth. Or, melt everything in a saucepan over low heat, stirring often.
- Fold in the crispy rice cereal until evenly distributed. Mixture will be thick.
- Spread the mixture into the prepared pan and smooth out the top. Place in the fridge to set for at least 2 hours.
- Remove from the pan and slice into 8 large bars or 16 small bars. Enjoy!
