Instructions

1
|
Pre-heat the oven to 450 degrees F.
2
|
In a large skillet over medium, heat your oil. Once hot, add in the Awesome grounds and cook according to package instructions until fully cooked. Remove from pan and set aside.
3
|
In the same skillet (no need to clean it), melt the butter. Add in the mushroom, onion, salt and pepper. Stir to combine and cook until the mushrooms begin to soften, about 6 minutes. Add in garlic and cook for 2 additional minutes.
4
|
Sprinkle in the flour, stirring constantly, and cook for one additional minute. Slowly pour in the broth and then the milk, stirring the whole time. Stir in the soy sauce and worcestershire sauce. Simmer until thickened, about 2-3 minutes. Remove from heat.
5
|
Stir in the Awesome Grounds until fully incorporated and then spread the mixture even in the pan. Top with the tater tots. Bake for 25-30 minutes or until tater tots are starting to turn a golden brown (everything else is cooked so we’re simply trying to crisp up the tater tots!).
6
|
Let cool slightly, serve, and ENJOY!

*Not all Worcestershire sauces are vegan so check the label. If you can't find a vegan variety, you can sub it for more soy sauce

Tips & Tricks (5)

  • Toast Your Tater Tots First 🍟
Bake tater tots at 400°F for 10-12 minutes before adding to the casserole to prevent them from becoming soggy and maintain their crispy exterior throughout cooking.
  • Build Deep Umami Layers 🧅
Sauté your onions and garlic until deeply caramelized, then bloom the Sweet Earth Awesome Grounds in vegan butter for 2-3 minutes to unlock rich, savory flavors that anchor the entire dish.
  • Create a Silky Vegan Roux 🥛
Whisk flour into melted vegan butter for a full 2 minutes before adding liquid to prevent lumps and create a luxuriously thick, creamy sauce that coats the vegetables perfectly.
  • Balance Your Umami Powerhouses ⚖️
Use equal parts soy sauce and vegan Worcestershire sauce (roughly 1-2 tablespoons each) to create complex, savory depth without overpowering saltiness or single-note flavors.
  • Add Fresh Parsley at the End 🌿
Stir in freshly chopped parsley just before serving to brighten the rich casserole with fresh herbal notes and add a pop of color that contrasts beautifully with the golden tater tot topping.
