Instructions
1
|
Preheat oven to 400° F.
2
|
Place the beans, corn, cheese, cumin, garlic powder, and salt in a bowl and stir to combine
3
|
Place two corn tortillas at a time in between two sheets of damp paper towels and microwave for 15-20 seconds to loosen (this will prevent the tortillas from cracking when they are rolled).
4
|
With one tortilla in front of you place 2 tablespoons of the mixture on the side closest to you and roll it up. If needed, use a toothpick to hold the taquito secure and remove it after baking.
5
|
Place the taquitos seam-side down on a foil-lined cookie sheet, spray the tops lightly with cooking oil and bake for 20-25 minutes.

Tips & Tricks (5)
- Warm Your Tortillas First 🔥Steam or warm corn tortillas for 30 seconds before rolling to make them pliable and prevent cracking, ensuring tight, secure taquitos that hold their filling.
- Drain and Dry Your Filling 💧Thoroughly drain canned black beans and thaw frozen corn, then pat dry with paper towels to remove excess moisture that would make taquitos soggy instead of crispy.
- Seam-Side Down for Crispiness 📍Place taquitos with the seam-side down on your baking sheet so the sealed edge toasts against the hot pan, creating maximum crispiness and preventing them from unrolling.
- Toast Your Spices First ✨Bloom the garlic powder and cumin in a dry skillet for 30 seconds before mixing into your filling to intensify their flavors and eliminate any raw spice taste.
- Double-Spray Technique 💨Spray taquitos with cooking oil both before and halfway through baking for even browning and superior crispiness without deep frying.
