Tips & Tricks (5)
- Choose the Right Feta Block 🧀Use a thick block of feta (not crumbled) that holds its shape during baking—this creates a creamy sauce base when it melts into the tomato juices and pasta water.
- Maximize Tomato Blister and Flavor 🍅Bake tomatoes at 400°F for 30-35 minutes until deeply blistered and some skins split—this concentrates their sweetness and creates caramelized depth that's essential to the dish.
- Master the Pasta Water Emulsion 💧Reserve at least 1 cup of starchy pasta water before draining, then add it gradually while tossing to create a silky, cohesive sauce that coats each strand without becoming oily.
- Layer Aromatics for Complexity 🧄Combine fresh minced garlic (not just powder) with the tomatoes and feta during baking, then finish with a small amount of fresh raw garlic tossed in at the end for bright, layered garlic notes.
- Add Basil at the Perfect Moment 🌿Tear fresh basil leaves and toss them in just before serving rather than during cooking—this preserves their delicate flavor and prevents them from turning dark or bitter.
