Vodka Lasagna
Instructions
1
Preheat oven to 425°F.
2
In a bowl, combine ricotta, egg, 3/4 cup mozzarella, 1/2 cup Parmesan, salt, pepper, garlic powder, and parsley. Mix well.
3
In a large pan, melt butter with olive oil over medium heat. Add minced garlic and cook until fragrant.
4
Stir in tomato paste and cook until slightly darkened.
5
Add vodka and whisk to combine. Let simmer a few minutes to cook off alcohol.
6
Pour in heavy cream and bring to a simmer. Let cook for 5–7 minutes, whisking occasionally.
7
Season sauce with salt, pepper, garlic powder, and parsley. Stir in 1 cup Parmesan cheese.
8

Tips & Tricks (5)
- Bloom the Tomato Paste 🍅Cook the tomato paste in butter for 2-3 minutes before adding vodka to deepen its flavor and remove any metallic taste, creating a richer sauce foundation.
- Let Vodka Reduce Properly 🔥After adding vodka, simmer for 3-5 minutes to allow the alcohol to burn off completely while concentrating its subtle flavor into the sauce—never skip this step.
- Build Moisture Control in Ricotta Layer 🧀Drain ricotta in cheesecloth for 15-20 minutes before mixing to remove excess water, preventing a soggy lasagna and ensuring clean, distinct layers.
- Seal Edges with Extra Sauce 🛡️Apply vodka cream sauce around the perimeter of the pan before adding noodles to create a moisture barrier that prevents drying and ensures even cooking throughout.
- Rest Before Serving 📍Let the finished lasagna rest for 10-15 minutes after removing from the oven so the creamy sauce sets slightly, allowing perfect, clean slices without collapse.
