1/5
Vodka Sauce with Lobster and Radiatore Pasta
Instructions
1
|
Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
2
|
In a skillet over medium heat, melt butter. Add chopped lobster and cook for 2–3 minutes until lightly seared, then remove and set aside.
3
|
In the same skillet, add garlic and sauté until fragrant, about 1 minute.
4
|
Add tomato paste and cook until darkened and caramelized, about 2–3 minutes.
5
|
Pour in vodka and let simmer for 2–3 minutes to cook off the alcohol.
6
|
Add heavy cream and bring to a low simmer. Let cook for 7–10 minutes to reduce slightly.
7
|
Season with salt, pepper, garlic powder, and onion powder. Stir in lobster.
8
|
Add grated Parmesan, cooked pasta, and a splash of reserved pasta water. Stir to coat everything evenly.
9
|
Fold in chopped basil. Simmer for another 2–3 minutes, adjusting consistency with more pasta water if needed.
10
|
Serve warm with extra Parmesan and basil on top.

Tips & Tricks (5)
- Vodka Sauce Emulsification Technique 🥄Slowly whisk the heavy cream into the tomato base to create a smooth, velvety sauce without breaking or separating.
- Lobster Meat Preparation Hack 🦞Gently pat lobster meat dry before sautéing to ensure a perfect golden sear and prevent steaming instead of browning.
- Pasta Water Magic 💧Reserve at least 1 cup of starchy pasta water before draining - it's crucial for adjusting sauce consistency and helping the sauce cling to the radiatore's unique ridges.
- Garlic Infusion Technique 🧄Gently toast minced garlic in butter until just fragrant, being careful not to brown, to release maximum flavor without bitterness.
- Basil Bruising Trick 🌿Lightly bruise fresh basil leaves between your fingers before adding to release their essential oils and intensify the aromatic profile.
