1/5
Vodka Sauce with Lobster and Radiatore Pasta
Instructions
1
Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
2
In a skillet over medium heat, melt butter. Add chopped lobster and cook for 2–3 minutes until lightly seared, then remove and set aside.
3
In the same skillet, add garlic and sauté until fragrant, about 1 minute.
4
Add tomato paste and cook until darkened and caramelized, about 2–3 minutes.
5
Pour in vodka and let simmer for 2–3 minutes to cook off the alcohol.
6
Add heavy cream and bring to a low simmer. Let cook for 7–10 minutes to reduce slightly.
7
Season with salt, pepper, garlic powder, and onion powder. Stir in lobster.
8
Add grated Parmesan, cooked pasta, and a splash of reserved pasta water. Stir to coat everything evenly.
9
Fold in chopped basil. Simmer for another 2–3 minutes, adjusting consistency with more pasta water if needed.
10
Serve warm with extra Parmesan and basil on top.

Tips & Tricks (5)
- Bloom Your Tomato Paste 🍅Toast the tomato paste in butter for 2-3 minutes before adding other ingredients to deepen its flavor and eliminate any metallic taste from the can.
- Temper with Pasta Water 💧Reserve pasta water before draining and use it strategically to adjust sauce consistency—the starch creates a silky emulsion that clings beautifully to radiatore's ruffles.
- Gentle Lobster Treatment 🦞Fold lobster meat in at the very end off-heat to prevent overcooking and toughening; it only needs warming through in the residual heat of the sauce.
- Deglaze Strategically 🥃After sautéing lobster, deglaze the pan with vodka and let it reduce for 1-2 minutes to cook off the alcohol while capturing the concentrated butter and seafood flavors for the sauce.
- Basil Layering for Maximum Impact 🌿Reserve half your fresh basil to stir into the sauce off-heat and use the other half as a fresh garnish just before serving to preserve bright flavor at multiple levels.
