Ingredients

  • 15 ¼ ounces - Yellow cake mix
  • 3 ⅓ ounces - Pistachio pudding
  • ½ cup - Unsweetened shredded coconut
  • ½ cup - Pecans
  • 2 - Eggs
  • ½ cup - Canola oil

Instructions

  1. Start by preheating the oven to 350℉ and use parchment paper to line a cookie sheet.
  2. Next, in a mixing bowl, add the box of cake mix, eggs, oil, shredded coconut, and pistachio pudding.
  3. Beat all the ingredients together, then fold in the chopped pecans.
  4. Reserve some chopped pecans to top each cookie.
  5. Using a cookie scoop, add the cookie dough onto the parchment paper and bake in the oven for 10-12 minutes.
  6. Remove from oven and allow the cookies to cool on the pan for 5 minutes before transferring to a wire cooling rack.
