2

Notes
1
If you’re making this in advance, I suggest leaving the feta off until ready to serve. If you want it super fresh, you can also wait to toss the dressing on until right before eating.

Tips & Tricks (5)
- Chill Your Ingredients First 🧊Refrigerate the watermelon, feta, and serving bowl for at least 30 minutes before assembly to keep the salad crisp and refreshing, preventing the feta from softening too quickly.
- Salt the Watermelon Strategically 🍉Lightly season the watermelon cubes with salt just before serving—this enhances the natural sweetness and creates a perfect flavor contrast with the salty feta without making the salad soggy.
- Balance Your Dressing Ratio 🫗Use a 3:1 ratio of olive oil to red wine vinegar with a drizzle of balsamic glaze to avoid over-acidifying the delicate watermelon; dress lightly and toss gently just before serving.
- Tear Rather Than Crumble Feta 🧀Hand-tear the feta into larger, irregular pieces instead of crumbling to create better texture contrast and prevent it from becoming too fine and dusty throughout the salad.
- Add Mint at the Very End 🌿Tear fresh mint leaves and fold them in just moments before serving to preserve their vibrant aroma and prevent them from bruising, oxidizing, or becoming bitter.
