Ingredients

  • 1 - small Watermelon, about 4 pounds
  • 1 - English cucumber
  • ½ - red onion
  • ⅓ cup - fresh mint
  • 2 tablespoons - olive oil
  • 1 ½ tablespoons - red wine vinegar
  • ¼ tsp - black pepper
  • ⅓ cup - feta
  • Balsamic glaze

Instructions

  1. In a large bowl, toss together the watermelon, cucumber, red onion, and mint.
  2. In a small measuring cup or bowl, whisk together the dressing ingredients until well combined: olive oil, vinegar, and black pepper.
  3. Pour the dressing over the salad and toss to coat. Sprinkle the feta over top and serve with balsamic glaze + additional mint and feta as desired. ENJOY!
  4. If you’re making this in advance, I suggest leaving the feta off until ready to serve. If you want it super fresh, you can also wait to toss the dressing on until right before eating.
