Ingredients
- 1 - small Watermelon, about 4 pounds
- 1 - English cucumber
- ½ - red onion
- ⅓ cup - fresh mint
- 2 tablespoons - olive oil
- 1 ½ tablespoons - red wine vinegar
- ¼ tsp - black pepper
- ⅓ cup - feta
- Balsamic glaze

Instructions
- In a large bowl, toss together the watermelon, cucumber, red onion, and mint.
- In a small measuring cup or bowl, whisk together the dressing ingredients until well combined: olive oil, vinegar, and black pepper.
- Pour the dressing over the salad and toss to coat. Sprinkle the feta over top and serve with balsamic glaze + additional mint and feta as desired. ENJOY!
- If you’re making this in advance, I suggest leaving the feta off until ready to serve. If you want it super fresh, you can also wait to toss the dressing on until right before eating.
