  • 8 ounces - feta cheese
  • ¾ cup - Greek yogurt
  • 1  - lemon
  • ¼ cup - olive oil
  • 2 tablespoons - pine nuts
  • 1 pinch - red pepper flakes
  • 2 tablespoons - mint

  1. To the bowl of a food processor, add 8 ounces feta cheese, ¾ cup Greek yogurt and zest of 1 lemon. Secure lid and run on low while drizzling in 2 tablespoons olive oil.
  2. Stop to scrape down sides, as needed. Continue to blend for about 1 to 2 minutes, until mixture is mostly smooth and fluffy. Use the back of a spoon to swirl onto a plate or platter.
  3. Drizzle on 2 tablespoons olive oil. Sprinkle with 2 tablespoons pine nuts, pinch of red pepper flakes and 2 tablespoons chopped mint.
  4. Serve with fresh-cut vegetables, crackers, pita or toasted baguette.
