Tips & Tricks (5)
- Make a Perfect Roux Base 🧈Cook your butter and flour together for 1-2 minutes over medium heat, stirring constantly, to create a smooth roux that prevents lumps when you add the milk.
- Warm Your Milk First 🥛Heat the milk separately before adding it to the roux—this prevents temperature shock and creates a silky, lump-free sauce that coats the pasta beautifully.
- Shred Cheese Fresh & Add Off-Heat 🧀Always shred sharp white cheddar from a block rather than using pre-shredded, and fold it into the sauce after removing from heat to prevent the cheese from becoming grainy or separating.
- Salt Pasta Water Generously 🍝Use well-salted pasta water (it should taste like seawater) and reserve 1 cup before draining—the starchy water helps thin and emulsify the cheese sauce for perfect consistency.
- Toast Your Seasoning Blend First 🌶️Bloom your all-purpose seasoning blend in the butter for 30 seconds before adding flour to unlock deeper flavors and prevent a raw, dusty taste in the final dish.
