Ingredients

  • 2 pounds - chicken breast
  • 1 tbsp - ghee or olive oil
  • ¼ tsp - ground pepper
  • ¼ tsp - sea salt
  • 1 tsp - cumin
  • ½ tsp - chili powder
  • 1 tsp - paprika
  • ½ tsp - garlic powder
  • ½ tsp - onion powder
  • 1 tbsp - olive oil
  • 1 - onion
  • 1 - red pepper
  • 1 - green pepper
  • Jalapeños
  • Lime

Instructions

  1. In your cast iron skillet, add ghee or olive oil over medium heat.
  2. Preheat oven to 400 degrees.
  3. Pat chicken dry with paper towels. I like to pound out my chicken so that it has an even thickness throughout.
  4. Combine pepper, sea salt, cumin, chipotle chili powder, garlic powder and onion powder in a small bowl. Rub this mixture on both sides of the chicken.
  5. Add chicken to pan and sear for 2-3 minutes on each side. Remove chicken from pan.
  6. Meanwhile, toss chopped veggies with olive oil. Spread veggies out on a parchment lined baking sheet.
  7. Place browned chicken alongside veggies and bake for 15-20 minutes (depending on thickness of chicken) until no longer pink.
  8. Garnish with jalapeños and lime juice if desired.
  9. Enjoy!
