Whole-Grain Spelt Rolls

Dough

Dissolve the yeast and honey in the lukewarm water. In a mixing bowl, combine the whole grain flour and salt. Add the yeast mixture to the flour and stir with a wooden spoon until all ingredients form a sticky dough. If needed, add 1–2 teaspoons of water. Cover the dough and let it rise at room temperature for two hours.
Shape the Rolls

Preheat the oven to 220 °C (200 °C fan/ convection) [about 425 °F] and place an ovenproof bowl of water on the bottom of the oven.

Place the dough on a floured work surface and, without kneading too much, shape it into a ball. Divide the dough into 8 equal pieces. Flatten the dough pieces slightly and place them on a baking sheet lined with parchment paper.
Bake the Rolls

Bake the rolls in the preheated oven for 20–25 minutes, until they are golden brown. Remove from the oven and let them cool on a wire rack before serving.
