Instructions
1
Preheat the oven to 350℉. Spray a 12-count muffin tin with nonstick cooking spray.
2
In a medium bowl, beat together the butter and brown sugar with a handheld electric mixer on medium speed until creamy, about 30 seconds, add the vanilla, applesauce, mashed bananas, and eggs and beat until combined.
3
Add the flour, baking soda, and salt and beat on low speed until all the flour is mixed in. Fold in chocolate chips or nuts, if using.
4
Scoop the batter into the prepared muffin tins filling each cup almost to the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
5
Let the muffins cool for 10 minutes before taking them out of the tin to finish cooling on a wire rack.

Tips & Tricks (5)
- Banana Ripeness is Critical 🍌Use bananas with brown spots and a sweet aroma—they have higher sugar content and better flavor than yellow bananas, reducing the need for added sweetness.
- Don't Overmix the Batter 🥣Mix wet and dry ingredients until just combined with visible flour streaks remaining; overmixing develops gluten and creates dense, tough muffins instead of fluffy ones.
- Replace Butter with Applesauce Strategically 🍎Substitute up to half the butter with the applesauce to reduce fat and calories while maintaining moisture—applesauce adds natural sweetness and tenderness.
- Toast Nuts for Enhanced Flavor 🌰Lightly toast chopped nuts in a dry pan for 2-3 minutes before adding to the batter to deepen their flavor and prevent them from sinking to the bottom.
- Fill Muffin Cups Strategically ⅔Fill cups only two-thirds full to allow proper rise and even browning; this prevents overflow and ensures consistent texture throughout all muffins.
