These light, fluffy waffles require no butter or oil, with the egg whites whipped and folded into the batter to keep them airy and moist. Made with milk, a touch of sugar or sugar alternative, and your choice of flour — including whole wheat for extra fiber — they are a healthier twist on classic waffles and perfect for breakfast, a snack, or a sweet treat topped with fruit, syrup, or yogurt.

Separate the eggs, beat the egg whites until stiff peaks form, and set aside briefly. In a separate bowl, whisk the egg yolks, milk, sugar, vanilla, and salt until frothy.
2
|
Mix the flour and baking powder and slowly stir into the liquid ingredients. Then carefully fold in the beaten egg whites.
3

Preheat the waffle iron. Lightly spray or brush both inside surfaces with oil. Pour in about 60 to 70 grams of batter per waffle and bake until golden brown. Repeat this process a total of eight times or until all the batter is used up.

Tips & Tricks (5)

  • Egg White Magic 🥚
Whip egg whites separately until stiff peaks form, then gently fold into the batter for the lightest, most airy waffles possible.
  • Flour Power 🌾
For maximum nutrition and flavor, use a mix of whole wheat and all-purpose flour to balance texture and keep waffles light.
  • Waffle Iron Prep 🧈
Lightly spray or brush your waffle iron with oil between each waffle to prevent sticking and ensure a crisp, golden exterior.
  • Batter Rest Technique 🕰️
Let the waffle batter rest for 5-10 minutes before cooking to allow the flour to hydrate and create a smoother, more tender waffle.
  • Temperature Perfection 🌡️
Use a digital thermometer to ensure your waffle iron is consistently heated to 375-400°F for even, golden-brown waffles every time.
