Separate the eggs, beat the egg whites until stiff peaks form, and set aside briefly. In a separate bowl, whisk the egg yolks, milk, sugar, vanilla, and salt until frothy.

Mix the flour and baking powder and slowly stir into the liquid ingredients. Then carefully fold in the beaten egg whites.

Preheat the waffle iron. Lightly spray or brush both inside surfaces with oil. Pour in about 60 to 70 grams of batter per waffle and bake until golden brown. Repeat this process a total of eight times or until all the batter is used up.
