Baguette Dough

Dissolve the yeast and honey in lukewarm water. Mix the flour and salt in a large bowl. Slowly add the yeast mixture and stir with a wooden spoon until a smooth, very moist dough forms.

Cover the dough and let it rise in a warm place for two hours.

Shaping and Baking

Preheat the oven to 240°C (465°F) using the convection setting. Place an ovenproof dish filled with water on the bottom of the oven. Generously dust the work surface and baguette tray with flour.

Place the dough on a floured work surface and halve it using a dough scraper or knife.

Shape the two dough halves into long baguettes using as few movements as possible, and place them into the grooves of the baguette pan.

Bake the baguettes in the oven for 20 minutes. Then let them cool in the pan.
