Instructions
1
|
Bring a large pot of salted water to a boil and cook pasta (I used penne) according to package directions (for al dente cook 1-2 minutes less than than package directions).
2
|
Heat a large saute pan over medium heat and saute the mushrooms for 5 minutes or until starting to turn golden.
3
|
Add garlic and continue to cook one minute.
4
|
Drain water off pasta (reserving 1/4 cup pasta water). Return the pasta to the large pot and toss with reserved pasta water and olive oil.
5
|
Add mushrooms to the pasta stirring to combine and place in a large serving dish.
6
|
Top with chives and parmesan.

Tips & Tricks (5)
- Dry Your Mushrooms Thoroughly 🍄Pat mushrooms completely dry with paper towels before slicing and cooking—moisture is the enemy of a golden, caramelized sear that builds deep flavor.
- Don't Crowd the Pan ⏱️Cook mushrooms in batches over medium-high heat without stirring constantly; this allows them to develop a rich, golden crust rather than steaming in their own moisture.
- Finish Pasta in the Sauce 🍝Reserve pasta water and finish cooking the noodles directly in your mushroom sauce for 1-2 minutes—the starch creates a silky, cohesive coating that traditional tossing cannot achieve.
- Bloom Your Garlic Properly 🧄Add minced garlic to the pan after mushrooms are seared and remove from heat for 30 seconds before adding liquid; this prevents burning while releasing its aromatic oils into the dish.
- Emulsify with Cold Butter 🧈Stir in cold cubed butter at the very end off-heat to create a luxurious, glossy sauce that coats the pasta beautifully and adds richness no amount of olive oil can replicate.
