Ingredients

  • 2 - zucchini
  • 2 - eggs
  • 1 clove - garlic
  • ½ cup - Parmesan cheese
  • ¼ cup - feta
  • 2 tablespoons - sour cream
  • ¼ cup - Greek yogurt
  • some chives
  • pepper and salt
  • 3–4 tablespoons - all purpose flour
  • lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the zucchini and coarsely grate them using the large holes of a box grater. In a bowl, toss the grated zucchini with a generous pinch of salt and let them sit for 10 minutes.
  2. Transfer the grated zucchini to a clean kitchen towel and squeeze out as much liquid as possible. Place the zucchini in a large bowl and add the eggs, flour, cheese, and garlic. Mix until well combined.
  3. Using a tablespoon or cookie scoop, divide the mixture into 8 to 10 portions on a parchment-lined baking sheet. Gently flatten each mound into a fritter. Bake for 25 to 30 minutes, or until golden brown around the edges.
  4. Meanwhile, place the feta in a bowl and mash it with a fork. Stir in the cream cheese and yogurt until smooth. Finely slice the chives and stir them into the dip. Season to taste with black pepper and a squeeze of lemon juice.
  5. Serve the zucchini fritters warm or hot with the feta dip on the side. They're at their crispiest straight from the oven but are still delicious once they've cooled.
