Baked Zucchini Fritters
These oven‑baked zucchini fritters are a quick, tasty way to enjoy zucchini that turns it into something crispy on the outside and tender inside — all without frying. The grated zucchini is drained of excess water, mixed with eggs, whole‑grain flour, garlic, and grated Parmesan (or Pecorino), then shaped into small fritters and roasted until golden. Wash the zucchini thoroughly and coarsely grate them using the large side of a box grater. Toss the grated zucchini with a little salt and set aside for 10 minutes.

Grate the cheese and peel the garlic clove, then finely chop it.
Make the Batter

Place the grated zucchini in a kitchen towel and squeeze out as much liquid as possible. Then transfer to a bowl and mix with the cheese, garlic, and the remaining ingredients.
Bake the Zucchini Fritters

Spoon the batter onto a baking sheet using a tablespoon or ice cream scoop, forming 8 to 10 evenly sized mounds, and gently flatten them. Bake the zucchini fritters in the oven for 25 to 30 minutes.
Prepare the Feta Dip
