Baked Zucchini Fritters

Preparation

Preheat the oven to 400°F (200°C) on the top and bottom heat setting.

Wash the zucchini thoroughly and coarsely grate them using the large side of a box grater. Toss the grated zucchini with a little salt and set aside for 10 minutes.

Grate the cheese and peel the garlic clove, then finely chop it.
Make the Batter

Place the grated zucchini in a kitchen towel and squeeze out as much liquid as possible. Then transfer to a bowl and mix with the cheese, garlic, and the remaining ingredients.
Bake the Zucchini Fritters

Spoon the batter onto a baking sheet using a tablespoon or ice cream scoop, forming 8 to 10 evenly sized mounds, and gently flatten them. Bake the zucchini fritters in the oven for 25 to 30 minutes.
Prepare the Feta Dip

Place the feta in a bowl and mash it with a fork.

Stir in the cream cheese and yogurt. Wash the chives and cut them into small rings, then add them to the dip and season with pepper and a splash of lemon juice.
