    Preheat the oven to 400°F (200°C). Wash the zucchini and coarsely grate them using the large holes of a box grater. In a bowl, toss the grated zucchini with a generous pinch of salt and let them sit for 10 minutes.

    Transfer the grated zucchini to a clean kitchen towel and squeeze out as much liquid as possible. Place the zucchini in a large bowl and add the eggs, flour, cheese, and garlic. Mix until well combined.

    Using a tablespoon or cookie scoop, divide the mixture into 8 to 10 portions on a parchment-lined baking sheet. Gently flatten each mound into a fritter. Bake for 25 to 30 minutes, or until golden brown around the edges.

    Meanwhile, place the feta in a bowl and mash it with a fork. Stir in the cream cheese and yogurt until smooth. Finely slice the chives and stir them into the dip. Season to taste with black pepper and a squeeze of lemon juice.

  5. Step 5

    Serve the zucchini fritters warm or hot with the feta dip on the side. They're at their crispiest straight from the oven but are still delicious once they've cooled.
