EASY
This fragrant cranberry sauce has the warm spices and flavors of the holiday season. You can make it up to one week ahead and keep it, tightly covered, in the refrigerator. The recipe is a Yummly original created by David Bonom.

From the Cook
1/2
Apple and Spice Cranberry Sauce
Instructions
1
|
Finely chop the shallot.
2
|
Heat the oil in a medium saucepan over medium-high heat. Add the shallot and cook until slightly softened, 2-3 minutes. Stir in the cranberries, granulated and brown sugars, cider, cinnamon, and allspice.
3
|
Bring mixture to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries have popped and the sauce thickens slightly, about 8 minutes.
4
|
Meanwhile, peel, core, and cut the apple into a 1/4-inch dice.
5
|
Stir the diced apple into the sauce and cook until slightly softened, about 2 minutes. Remove from heat and let cool to room temperature.
6
|
Chill sauce for at least 3 hours before serving to thicken.

Tips & Tricks (5)
- Apple Selection Magic 🍎Choose Golden Delicious apples that are firm and slightly underripe to maintain texture and prevent mushiness when cooked in the cranberry sauce.
- Spice Bloom Technique 🌶️Toast the ground allspice and cinnamon in the pan with the shallots for 30-45 seconds before adding liquids to intensify their aromatic compounds and deepen flavor.
- Cranberry Texture Control 🫐For a perfect consistency, gently press some cranberries against the pot's side to create a mix of whole and burst berries, which adds complexity to the sauce's texture.
- Sugar Layering Trick 🍬Add brown sugar first for deep caramel notes, then granulated sugar for brightness, creating a more nuanced sweetness profile in your cranberry sauce.
- Make-Ahead Moisture Seal 🧊When storing the sauce, place a piece of plastic wrap directly on the surface to prevent a skin from forming and preserve maximum moisture during refrigeration.
