Tips & Tricks (5)
- Reserve Pasta Water Before Draining 💧Always save 1-2 cups of starchy pasta water before draining—this is crucial for achieving the perfect sauce consistency and helps the cream emulsify beautifully with the pasta.
- Render Bacon Low and Slow 🥓Cook bacon on medium-low heat for maximum crispiness and to prevent the fat from burning, which keeps the sauce from becoming bitter when you add it back.
- Temper the Cream Sauce Carefully 🔥Heat heavy cream gently over medium heat and never let it boil; add cheese off-heat or at very low temperatures to prevent the sauce from breaking and becoming grainy.
- Bloom Your Powdered Seasonings 🧄Toast the garlic powder and onion powder briefly in the bacon fat before adding cream to amplify their flavors and eliminate any raw powder taste in the final dish.
- Finish with Fresh Cracked Pepper 🫑Add freshly cracked black pepper at the very end of cooking rather than at the beginning to preserve its sharp, peppery notes and prevent flavor degradation from heat.
