From the Cook
1/2
Bacon Roasted Brussels Sprouts
Instructions
1
Preheat the oven to 375°F.
2
Line a large baking sheet with parchment paper.
3
Trim the ends from the Brussels sprouts, cut in half, and place in a large mixing bowl. Drizzle with olive oil and season with salt, garlic powder, and black pepper.
4
Dice the bacon into 1/4-inch pieces and place in a large skillet.
5
Set the skillet over medium high heat. Fry the bacon, stirring frequently with a rubber spatula, just until it begins to render some fat, about 2-3 minutes. The bacon should still be very undercooked. Transfer the bacon and fat to the bowl of Brussels sprouts.
6
Toss the Brussels sprouts and bacon until the oil is evenly distributed. Transfer to the parchment lined baking sheet.
7
Roast the Brussels sprouts and bacon on the middle rack of oven for 15 minutes.
8
Open the oven and stir with a rubber spatula. Continue roasting until the Brussels sprouts are tender and slightly charred, and the bacon is browned and crisp, 10-15 minutes.
9
Check to see that dish is done. Remove from oven or add time as needed.
10
Serve immediately.

Tips & Tricks (5)
- Bacon Rendering Technique 🥓Cook bacon until just crispy before chopping, then reserve the rendered fat to toss with Brussels sprouts for maximum flavor and superior crispiness without excessive greasiness.
- Cut Brussels Sprouts Uniformly 🔪Halve Brussels sprouts to roughly the same size so they cook evenly; smaller pieces will caramelize while larger ones stay tender for perfectly balanced texture throughout.
- High Heat for Caramelization 🔥Roast at 425°F or higher and resist stirring for the first 15 minutes to develop a golden, crispy exterior while the bacon fat infuses deeper flavor.
- Seasoning Order Matters 🧂Apply salt, pepper, and garlic powder before roasting rather than after so the seasonings caramelize into the sprouts' cut surfaces for more pronounced flavor development.
- Final Bacon Integration 🎯Fold in the crispy bacon pieces during the last 2 minutes of roasting so they stay crunchy instead of softening, and finish with a drizzle of fresh extra-virgin olive oil for brightness.
