Anyone who isn't a fan of Brussels sprouts simply hasn't tried them roasted with bacon! Dare we say this side dish is better than french fries? The recipe is a Yummly original created by Sara Mellas.
6 Ingredients
Recipe
Bacon Roasted Brussels Sprouts
Instructions
1
|
Preheat the oven to 375°F.
2
|
Line a large baking sheet with parchment paper.
3
|
Trim the ends from the Brussels sprouts, cut in half, and place in a large mixing bowl. Drizzle with olive oil and season with salt, garlic powder, and black pepper.
4
|
Dice the bacon into 1/4-inch pieces and place in a large skillet.
5
|
Set the skillet over medium high heat. Fry the bacon, stirring frequently with a rubber spatula, just until it begins to render some fat, about 2-3 minutes. The bacon should still be very undercooked. Transfer the bacon and fat to the bowl of Brussels sprouts.
6
|
Toss the Brussels sprouts and bacon until the oil is evenly distributed. Transfer to the parchment lined baking sheet.
7
|
Roast the Brussels sprouts and bacon on the middle rack of oven for 15 minutes.
8
|
Open the oven and stir with a rubber spatula. Continue roasting until the Brussels sprouts are tender and slightly charred, and the bacon is browned and crisp, 10-15 minutes.
9
|
Check to see that dish is done. Remove from oven or add time as needed.
10
|
Serve immediately.

Tips & Tricks (5)
- Bacon Crisp Technique 🥓Par-cook the bacon slightly before mixing with Brussels sprouts to ensure it becomes perfectly crispy without burning during roasting.
- Sprout Cutting Hack 🔪Always cut Brussels sprouts in half and place them cut-side down on the baking sheet for maximum caramelization and even roasting.
- Oil Distribution Trick 💦Use a large mixing bowl to toss Brussels sprouts and bacon with oil and seasonings, ensuring every piece is evenly coated for optimal flavor.
- Spacing is Key 📏Give Brussels sprouts plenty of room on the baking sheet - overcrowding leads to steaming instead of roasting, preventing that desirable crispy exterior.
- Seasoning Layer Strategy 🧂Sprinkle garlic powder and black pepper in two stages - once during initial tossing and again halfway through roasting for deeper, more complex flavor.
