Instructions
1
Preheat oven to 350F. Slice the peaches in half vertically, twist the halves apart, and remove the pit. Arrange cut-side up in a baking dish. I used a 7x9 baking dish but an 8x8 or 9x9 baking pan works too.
2
Whisk flour, oats, brown sugar, and cinnamon together in a small bowl. Using a fork, cut in the cold butter until small crumbs form. Generously spoon the crumble topping to the center of each peach.
3
Bake for about 15-20 minutes, or until peaches are tender and the crumble is golden brown. Remove from oven and let cool slightly before serving.

Tips & Tricks (5)
- Select Peaches at Peak Ripeness 🍑Choose peaches that yield slightly to gentle pressure and have a fragrant aroma—they'll caramelize beautifully and provide natural sweetness without added sugar.
- Freeze Butter for Superior Crumble 🧈Cut cold butter into small cubes and keep it chilled until the last moment; this creates distinct, pea-sized crumbles that bake into a crispy, textured topping rather than a dense cake.
- Macerate Peaches Before Baking 💧Toss peach halves with a tablespoon of brown sugar 15 minutes before baking to draw out their natural juices, creating a syrupy caramelized base that concentrates the fruit's flavor.
- Toast Oats for Enhanced Flavor 🌾Lightly toast the rolled oats in a dry skillet for 2-3 minutes before mixing into the streusel—this adds a subtle nutty depth that elevates the overall complexity of the topping.
- Watch for Golden Edges 👁️Bake until the peach edges begin to caramelize and the streusel turns deep golden brown (about 25-30 minutes); this visual cue ensures maximum caramelization and optimal texture contrast.
