Instructions
1

2

3
Meanwhile, melt butter in a pan over medium heat. Add garlic and cook until fragrant.
4
Whisk in flour and cook for 1–2 minutes to form a roux.
5
Slowly add milk while whisking to avoid clumps. Cook until thickened.
6
Season with salt, pepper, garlic powder, onion powder, and paprika.
7
Stir in mozzarella, cheddar, and Parmesan. Mix until fully melted and creamy.
8
Add thinly sliced potatoes to the sauce and stir to coat evenly.
9
Spoon a layer of cheesy potatoes onto each par-baked cheese bread base. Top with extra sauce and cheese.
10
Return to oven and bake for 10–12 more minutes until tops are golden and bubbly.
11
Garnish with chopped chives and more Parmesan before serving.

Tips & Tricks (5)
- Slice Potatoes Uniformly 🥔Use a mandoline slicer to cut potatoes to consistent 1/8-inch thickness, ensuring even cooking and preventing some bites from being undercooked while others are mushy.
- Pre-Cook Potatoes Slightly 🍳Parboil sliced potatoes for 3-4 minutes before layering to jump-start cooking and ensure the centers are fully tender by the time the cheese bread base is golden brown.
- Mix Cheese Strategically 🧀Layer softer cheeses (mozzarella) between potatoes and reserve harder, flavorful cheeses (Parmesan) for topping to create optimal texture contrast—soft interior with a crispy, umami-rich crust.
- Toast the Cheese Bread Base 🍞Pre-bake the Brazi Bites foundation for 5 minutes at 400°F before adding the potato mixture to create a structural barrier that prevents moisture from soaking it through.
- Cool Before Serving ❄️Let baked bites rest for 3-4 minutes after coming out of the oven so the cheese sets slightly, preventing the filling from sliding out when bitten into, while staying deliciously warm.
