Tips & Tricks (5)
- Dry Brine Your Thighs 🧂Apply garlic powder, onion powder, sea salt, and black pepper 2-4 hours ahead of cooking to allow the seasonings to penetrate the meat and enhance moisture retention during cooking.
- Render the Fat Properly 🔥Start cooking skin-side down on medium heat for 8-10 minutes before flipping to render the fat and create a crispy, flavorful exterior that won't burn when BBQ sauce is applied.
- Apply Sauce Strategically ⏱️Add BBQ sauce only in the final 5-7 minutes of cooking to prevent burning; brush it on multiple times for layered flavor without charring the sugars.
- Use Internal Temperature Guide 🌡️Pull chicken thighs from heat at 165°F internal temperature (checked at the thickest part without touching bone) to ensure food safety while maintaining juiciness.
- Rest and Glaze for Maximum Flavor 🍯Let cooked thighs rest 5 minutes, then brush with an extra coat of room-temperature BBQ sauce to create a glossy finish and allow juices to redistribute throughout the meat.
