Beef & Sweet Potato Bowls with Garlic Herb Sauce
For the Garlic Herb Sauce

Preheat oven to 425°F (220°C). Lightly spray cubed sweet potatoes with cooking spray, season with salt, and roast for 25–30 minutes until tender and golden.

In a skillet, sauté diced onion until translucent. Add ground beef and cook until browned.

Stir in minced garlic, tomato paste, cumin, paprika, cayenne, and salt. Simmer until fully combined and aromatic.

In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, parsley, garlic powder, onion powder, Dijon mustard, salt, pepper, and a splash of water to thin.

To assemble, divide roasted sweet potatoes among four bowls. Top with beef mixture and a sprinkle of cheddar cheese.

Drizzle with garlic herb sauce and garnish with extra parsley if desired. Serve hot or portion into containers for meal prep.
