Tips & Tricks (5)
- Day-Ahead Custard Soaking 🌙Prepare the casserole the night before and refrigerate for 8-12 hours—this allows the brioche to fully absorb the custard mixture, creating a creamy, cohesive texture throughout rather than dry spots.
- Quality Brioche Selection 🥐Use day-old brioche that's slightly stale rather than fresh—the drier texture absorbs the egg custard better and prevents the casserole from becoming soggy or mushy.
- Temperate Egg Mixture Method 🥚Whisk eggs and milk together first, then slowly warm the mixture to room temperature before pouring over brioche—this prevents cooking the eggs prematurely and ensures an even, silky custard.
- Brown Sugar Caramelization 🍯Sprinkle brown sugar on top just before baking rather than mixing it in—it will caramelize and create a delicious crispy, golden crust that contrasts beautifully with the creamy interior.
- Precise Oven Temperature & Timing ⏱️Bake at 350°F for 40-50 minutes until the center is set but still slightly jiggly—overbaking dries it out, so use a toothpick inserted in the center as your guide for perfect doneness.
