Tips & Tricks (5)
- Cheese Emulsion Magic 🧀Remove the cheese sauce from heat before adding cheese to prevent breaking, and add cheese gradually while stirring to create a smooth, creamy texture.
- Broccoli Blanching Perfection 🥦Blanch broccoli florets in salted boiling water for exactly 2 minutes, then immediately shock in ice water to preserve bright color and crisp texture.
- Pasta Water Gold 💧Always reserve 1 cup of pasta water before draining; the starchy liquid helps bind the sauce and adjust consistency if needed.
- Broiler Browning Technique 🔥For the perfect golden crust, place the mac and cheese 4-5 inches from the broiler and watch carefully, rotating the dish for even browning.
- Cheese Blend Strategy 🧀Combine different cheese types like cheddar, mozzarella, and Parmesan for a more complex, layered flavor profile that melts beautifully.
