From the Cook
1/2
Buffalo Cauliflower
Instructions
1
Preheat the oven to 450°F.
2
Lightly coat a baking sheet with oil. Set aside.
3
Separate the cauliflower into florets 1 1/2 to 2 inches wide, but include any smaller pieces, as well.
4
Combine the oil, nutritional yeast, and seasonings in a large bowl and stir until well combined. Add the cauliflower and toss to coat evenly.
5
Arrange the cauliflower in a single layer on the prepared baking sheet.
6
Bake the cauliflower on middle rack of oven until well browned in spots and tender-crisp (check with a fork), about 15 minutes. While the cauliflower bakes, make the sauce.
7
Place the hot sauce and melted butter in a large bowl and stir to combine. Set aside.
8
Check to see that cauliflower is done. Remove from oven or add time as needed.
9
Add the hot cauliflower to the sauce mixture and toss to coat.
10
Transfer cauliflower to a platter. Serve immediately with blue cheese dressing and celery sticks.

Tips & Tricks (5)
- Dry Your Cauliflower Thoroughly 💧Pat the cauliflower florets completely dry with paper towels before coating—excess moisture prevents crispiness and causes the batter to slide off during baking or frying.
- Double-Coat for Maximum Crunch 🥬Dip battered cauliflower twice, letting excess batter drip off between coatings, to create an extra-crispy exterior that holds the spicy buffalo sauce better.
- Temper Your Hot Sauce with Butter 🔥Mix hot sauce with melted salted butter in a 2:1 ratio and let it cool slightly before tossing with cauliflower—this prevents soggy coating and creates a glossy, clinging sauce.
- Bloom Your Spices in Oil First 🌶️Toast the cayenne, smoked paprika, onion powder, and garlic powder briefly in warm avocado oil before mixing into your batter to deepen their flavors and eliminate raw spice taste.
- Serve Immediately on a Hot Plate 🍽️Transfer buffalo cauliflower to a preheated serving dish right after tossing with sauce—the residual heat keeps them crispy while the blue cheese dressing stays cool and creamy alongside.
